Poured this over rigatoni last night and the pumpkin seed butter actually gives it that rich, creamy texture without any dairy heaviness. My husband couldn't tell it wasn't made with cream, and I didn't have to worry about my stomach afterward.
I was skeptical about a creamy vodka sauce without cream, but the pumpkin seed butter gives it that rich, velvety texture I missed on my dairy-free diet. Poured it over rigatoni last night and it coated every piece perfectly with that classic tangy kick.
The pumpkin seed butter base is what sold me, and honestly I can't taste the difference from a traditional vodka sauce. It's rich and creamy without any of that heavy, greasy aftertaste, and it clings to pasta just right.
