Italian Vinaigrette & Marinade

Used this as a marinade for chicken thighs before grilling and the avocado oil kept them so juicy, none of that greasy pooling you get with cheaper dressings. It's Whole30 friendly too, which is why I switched.

The citrus kick from the avocado oil base is what sold me—it’s tangy without being heavy, and a little goes a long way on a simple spinach salad. I’ve even used it as a quick marinade for chicken, and it held up nicely without separating.
